Want a taste of the perfect summer salad? You need a watermelon!
2 C mixed greens
2 C watermelon, 1-inch cubes, seeds removed
1/4 red onion sliced thin
1 T. mint or basil (not both) sliced very thin
1/2 C feta cheese, crumbled
1/2 C Champagne vinaigrette (adjust more or less depending on how “dressed” you like your salad
Toss it all together and enjoy! (You can adjust any of the ingredients – like more feta? Go ahead. Less mint or basil? Fine. Add chunks of tomato? Okay.)

I love watermelon — good, sweet watermelon. I eat it right down to the rind. But I’m not sure I would have tho’t to add the other things to make a watermelon salad. Maybe I’ll have to try it.
Other summertime favorites: cantaloupe, strawberries, ice cream. But for summer, I prefer not to have to have a ‘recipe’ as that evokes ‘work’ — so just the simple, cut up and serve.
Sadly I’m not much of a cook, but my favorite summer treat I enjoy eating is blackberry pie. Mmmmm. Thanks for the giveaway!!
